Time: 1:00 pm to 5:00 pm
For: 9th and 10th grade students

Description: This class is designed for students who want to increase their knowledge of basic baking and pastry techniques. Come and hone your skills under the guidance of the award-winning faculty of the Culinary Institute of Michigan. Students will develop an understanding of the importance of accuracy in baking and pastry formulas and use the products that they work within the skills phase to create finished composed dessert dishes to taste. Basic cake decorating will also be covered. Students will learn the importance of mise en place, having everything in its place.

Outcomes: Participants in this course will develop an understanding of:

  • Basic knife skills (important to today’s pastry chef)
  • Basic baking techniques
  • Basic baking methods
  • Conceptualizing a plated dessert
  • Taste, texture, and doneness for plated desserts
  • Plating techniques

Price: $65.00 per person (includes a buffet lunch immediately before the class, lunch begins at 11:45 am class will start promptly at 1:00 PM)

Students must be accompanied by a parent or guardian (the fee only applies to the student, not the parent or guardian).

Supplies: All supplies will be provided for participants with the exception of knives. Participants must provide their own knives.
Recommended for this class are the following: one French or cooks knife, one paring knife, and one serrated knife.
***It is recommended that knives are sharpened prior to coming to class under proper supervision.

Dress code: In order to provide a safe sanitary environment for all participants the following must be adhered to for all participants and their chaperone:

  • Nonslip, close-toed close backed shoes.
  • Legs must be fully covered.
  • Hair must be tied back
